A WEEK OF FAMILY DINNERS #2 | DINNER INSPO & WHAT I EAT | EMILY NORRIS


Hi guys. Tonight for dinner I’m making a Thai
Curry in our slow cooker. That is why it’s currently light while I’m filming, it’s about
midday now. I’m going to chuck everything into our slow cooker so that it’s ready for
later on. I’ll show you what goes into it. All right, this is everything that’s going
to go into it. Last night I pulled out about four chicken breasts from our freezer so that
it could defrost overnight. I’ve got that there chopped up. That’s going in and then
I’m also throwing in a courgette, which is on its last legs, so I need to use this up.
I may also add a pepper, but we’re a bit low on veg at the moment. I’m going to put this
in for now and if we go out and get more I’ll stick that in as well. Then you basically
use about a quarter of this jar. This is the green Thai Curry paste from Blue Dragon. Then
also a can of coconut milk. All right, now all I’m going to do is chuck
all the ingredients into my slow cooker and have it on high for four hours. I tend to
always do chicken on high for four hours. But on the jar of the paste it says they recommend
to put in [inaudible 00:01:07] to add mushrooms, so that’s something you could try. And I also
noticed I’m doing double the chicken. The jar again, it says for 400 grams of chicken,
use a quarter jar of the paste. But I’m doing double that chicken so I’m going to do half
of the jar of the paste. But I only have one coconut milk so it might be quite strong,
but we’re going to give it a go. (music) Okay, it’s four hours later now and we’ve
just plated up our dinner. We’re having it with brown rice and then this is the chicken
curry on top. I did actually end up adding one green pepper when there was about an hour
left. Yeah, it looks really, really good. The whole house smells amazing. We’re going
to eat this now. Hi guys. Tonight for dinner we’re having a
Shepherd’s pie. Today I filmed a meal prep video and I actually made three Shepherd’s
pies. Tonight is quite a big one, so we may even have enough for tomorrow night as well.
But yeah, what goes into this is pretty much carrots, onions, celery, lamb mince, and then
it’s covered with mashed potato. And I’m going to sprinkle a little bit of cheese on top
and we’ll probably serve this with some gravy. But yeah, I like this dinner because it’s
all in one. The veg, the meats, the potato, it’s all in one dish. We’re just going to
eat that now and it’s a nice hearty meal for when it’s cold outside as well. Everything in the Shepherd’s pie has already
been cooked on the Hob, so all I’m doing now when I put it in the oven, is just heating
it up. (music) All right, this is my portion and then we’re
just having some gravy with it. It’s literally just [inaudible 00:03:32]. It’s not homemade
or anything, but that is dinner tonight. Then we’ve also got some more for another lunch
or another dinner. Tonight for dinner we’re going to be trying
out some vegetarian enchiladas. This is a Jamie Oliver recipe and I’ve never tried it
before. I just thought it might be a good one because I try to have at least two vegetarian
meals a week. I’m trying to just cut down on meat. There’s so many benefits to that
for me and the environment as well. I just thought if I could slowly stop eating as much
meat, that’ll be easier. And my mom in Canada, she’s actually gone nearly completely vegetarian
by adding another day a week she’ll eat vegetarian. She started out by eating one day a week vegetarian
and then she just slowly upped it and I think she’s up to five days a week now she’s veggie.
I’m going to try this tonight. They sound really good, loads of veg in it with black
beans. Obviously in a wrap with some cheese as well, so they look delicious. I’ll show
you how I do it. This is everything I’m going to need for these
enchiladas. We’ve got spring onions, coriander, two red peppers, some peeled plum tomatoes,
sweet corn, cumin, a fresh chili, fresh lime, wraps, garlic, black beans, feta cheese and
then you can also put cheddar cheese on top. I might put a bit of that. But yeah, let’s get cooking.
(music) All right, the enchiladas were really, really
delicious and you don’t really miss the meat because of the beans and all the veggies.
But the only thing I would say was it did take me an hour to make, but I have made enough
for two nights, so we’ll have it again tomorrow night so that gets a bit more time back. Hi guys, I’m just cooking up dinner for tonight,
so I thought I would show you what we’re having. We’re basically having pasta but in a couple
of different ways. I’m just cooking up some pasta here on the stove and I’m also frying
some sausages just in our frying pan. The boys are going to have sausage pasta with
this homemade pasta sauce. I showed this in my recent meal prep video, but it’s basically
tomato, [inaudible 00:07:56], garlic, basil and olive oil and stuff like that. You can
make up a big batch like this and just give it to the boys and you can also freeze it
as well. They really like it and it’s good that it’s not a really sugary store bought
one like the one Matt and I are having tonight. This is our favorite ever pasta sauce. It’s
the Lloyd Grossman tomato and chili sauce, but it is actually a little bit spicy, hence
why the boys are going to have this one. We’re going to have this one and in ours, we’re
actually having left over chicken. I slow cooked a whole chicken the other day and that
normally feeds us for two days. We had a gravy dinner one day and then I’m going to put this
cooked chicken in with the pasta sauce and then I’m also going to put in some broccoli.
I need to just chop up some broccoli. We’re going to be having all of this. And
then I’ve also got some garlic bread because the boys go crazy for it. It’s literally their
favorite thing. They’re each going to have a garlic bread each. I’m going to avoid it
because I’m really trying my hardest to be good because it’s 2020 and all that stuff.
But yeah, I’m going to cook it up and I’ll show you it when it’s done. (music) Hi guys. Tonight for dinner we are having
a slow cooker, veggie chili. This is the recipe that’s actually in my planner, but I’ll also
link it down below if you guys want to remake it. It basically has kidney beans in it, chopped
up tomatoes, sweet potato, carrots, celery, onion, garlic. So many veggies and Matt will
eat this with brown rice but I’m actually just going to have it plain like this because
I’m really trying to cut down on carbs. Then I’ve put a tiny bit of cheese on top as well.
This is just a really yummy warming dinner. We’ve also made enough for another two nights
probably or I can have it for lunch as well. So yeah, it’s a really nice healthy one. So
yeah. (music) Hi guys. Tonight for dinner, I’m having quite
an easy lazy dinner. I didn’t reorganize anything. I don’t know if any you guys do this one as
well, but if you don’t it’s a really good one if you need a nice healthy dinner in a
rush. When I went to the supermarket today, I bought one of their whole cooked chickens.
At the back of our supermarket they have a spit roast thing and they do all types of
different chicken like barbecue and Southern fried and stuff like that. But I just bought
a whole cooked chicken so we’re all going to have that tonight. The kids like it as
well, so they’ll just have cut up bits of chicken and then Matt and I are going to have
it with salad. I think Matt will also have a jacket potato with it. But the kids, I’m
going to do them some chips on the side and then some raw veggies. Because as I’ve said
before, they really like to eat raw veggies. So yeah, that is what we’re having tonight
for dinner. All that you have to do for this one is just
shove some chips and some potatoes in the oven and I’ve got some salad bits that I’m
just going to cut up and make into a bit of a salad and that is dinner done tonight. Tonight for dinner, we’re having pork fillets
with stir fry on the side and Matt is also going to have a jacket potato. We’ve got the
pork fillets, they came with a peppered crust and we’ve literally just fried them in the
frying pan for a few minutes on each side. Then did the stir fry separately. Just really
fancy that kind of veg. We’ve got some soy sauce in there as well. Then Matt’s going
to have a jacket potato because the boys are having jacket potatoes tonight for dinner. This is Matt’s jacket potato. He makes crispy
jacket potatoes. The kids love them as well. Obviously you can have loads of different
toppings. You’re just going to have butter, aren’t you? Oh, yeah. Basically, his secret is you wash them, cover
them in olive oil, then put it on high in the oven for 20 minutes, like 200 and then
he turns it down to 170 for 45 minutes? Yeah, to an hour. Yeah, 45 minutes to an hour, and then they
come out like this. So yes, bit of a random dinner- Mom, we make [inaudible 00:14:11] with [inaudible
00:14:14]. They’re very yummy. (music)
